Processing quick-frozen green peppers helps preserve their vibrant color, natural flavor, and essential nutrients. This method allows for long-term storage and makes the product convenient for consumption at any time. The process involves several key steps to ensure quality and safety. First, selecting the right raw materials is crucial. Choose fresh green peppers that are mature, with firm and thick flesh, uniform shape, consistent size, and no signs of decay, insect damage, or disease. These characteristics help maintain quality during freezing. Next, the preparation stage begins. Wash the green peppers in clean water to remove dirt and impurities. Remove the stems and seeds, then cut the peppers into uniform strips, matching the thickness of the flesh. Rinse the strips in fresh water and drain them thoroughly. To prevent discoloration, briefly soak them in a 0.1% salt solution before drying. Afterward, blanching and cooling take place. Place the prepared strips into a 0.3% sodium bisulfite solution at 100°C and blanch for 1 to 3 minutes. Then, quickly rinse them under running water to cool down. Once cooled, drain off excess moisture and proceed to the next step. Finally, quick-freezing and cold storage are essential. Spread the green pepper strips evenly on a freezing tray and place them in a blast freezer. Freeze rapidly at -35°C for 6 to 7 minutes until the center temperature reaches -15°C. At this point, the product can be weighed, sorted, and packaged—typically 20 bags per 500 grams, with a net weight of 10 kg per package. Store the finished product in a cold room where the temperature does not exceed -18°C to maintain quality over time. This comprehensive approach ensures that the green peppers retain their nutritional value, texture, and visual appeal, making them a versatile and healthy food option.
