Bean storage and freshness management>
The suitable storage temperature for kidney beans is between 8°C and 10°C. If the temperature is too low, they are prone to freezing damage. The initial signs of spoilage include the appearance of rust-colored dents on the surface, followed by water-stained spots and eventual rotting. For optimal storage, the atmosphere should contain 2% to 3% oxygen and less than 10% carbon dioxide. There are several common storage methods available.
1. **Cooling and Storage Method**: Begin by cleaning the soybean meal thoroughly. Then, blanch it in boiling water at 100°C for approximately 2 minutes. Immediately transfer the beans to cold water to cool them down to room temperature. After draining, place them into a plastic bag, remove as much air as possible, and seal the bag tightly. Next, freeze the bag rapidly at -25°C until fully frozen. Finally, store the bag in a freezer at -18°C for long-term preservation. This method is typically effective for up to six months or one year, depending on conditions.
2. **Small Package Storage Method**: Place the beans into polyethylene plastic bags with a thickness of 0.1 mm, filling each bag with 5 kg of beans. Seal the bag securely and add 0.5 to 1 kg of slaked lime inside to help absorb moisture. Store the sealed bags in a warehouse and treat them with fumigation using sec-butylamine at a concentration of 0.01 ml/l. Maintain a storage temperature of 8°C to 10°C, and inspect each bag every 10 to 14 days. This method can preserve the beans for up to 30 days effectively.
These methods ensure that kidney beans remain fresh and safe for consumption over an extended period when properly stored. It's important to monitor both temperature and humidity levels to prevent spoilage and maintain quality. Whether you're storing for short-term use or long-term preservation, choosing the right method based on your needs will make a significant difference in the outcome.
