Strawberry Bruschetta by Fresh Mommy Blog

I’ll admit it—I’m a sucker for goat cheese. There’s something about its creamy texture and tangy flavor that just calls to me. Combine that with the natural sweetness of strawberries, the freshness of basil, and a hint of balsamic vinegar, and you’ve got a dish that’s nothing short of divine. It’s the perfect balance of flavors—sweet, savory, and slightly tangy—all wrapped up in one delightful bite. This recipe would be a fantastic addition to any special dinner, but let’s be honest—it’s also perfect for those impromptu nights when you just feel like treating yourself.

Case in point? A couple of weeks ago, my family and I were winding down after a long day, and I suddenly had an overwhelming craving for this bruschetta. So, without hesitation, we threw together a plate of these beauties at midnight just because. Trust me, it’s that kind of recipe.

Strawberry BruschettaAll you need to do is brush your baguette slices with olive oil and pop them into the oven until they’re perfectly toasted. Then, layer on a generous dollop of goat cheese, top it with the sweet strawberries, sprinkle some fresh basil, and finish it off with a drizzle of olive oil and balsamic vinegar. It’s simple, yet absolutely mouthwatering. Easy enough for a last-minute snack, but elegant enough for a romantic dinner.

Strawberry and Goat Cheese Bruschetta

Ingredients //
French baguette, sliced on the diagonal
Olive oil
4 oz goat cheese
1 cup strawberries, sliced or chopped
1 teaspoon sugar
2-3 basil leaves, thinly sliced
Balsamic vinegar
Cracked black pepper

Instructions //
Preheat your oven to 350°F (175°C). In a small bowl, combine the strawberries and sugar. Toss gently to coat the strawberries evenly, then let them sit for about 30 minutes to allow the sugar to draw out their juices.
Arrange the sliced baguette on a baking sheet and lightly brush each slice with olive oil. Place the slices in the preheated oven for approximately 5 minutes, or until they’re golden brown and crispy. Remove from the oven and spread a thin layer of goat cheese over each slice.
Spoon the strawberry mixture generously over the goat cheese, then drizzle lightly with olive oil and balsamic vinegar. Top each slice with a pinch of fresh basil and cracked black pepper, to taste. Serve immediately and enjoy!
